How To Make Raw Celeriac And Bacon Salad

Chop your bacon into lardons and fry in a large, hot frying pan. While the bacon is cooking peel the celeriac and cut into small rectangular blocks and then into matchsticks. Halve the apples, cut into quarters, remove the core and again cut into matchsticks. To stop the apple from discolouring squeeze over a little bit of lemon juice.

Once the bacon is cooked and crispy, turn it out onto a plate covered with a sheet of kitchen towel to blot the excess oil.

arrange the watercress and rocket salad on a large plate, then top with the celeriac, apple and the bacon.

In a small bowl mix together the olive oil, 3-4 tsp of lemon juice, salt and pepper and the mustard. Drizzle over your salad and top with some chopped parsley. Serve with sourdough bread or toast.
