How To Make A Tasty Thai Mussel Dish

Enlarge Mussels aren't a usual feature in our weekly shopping lists, but you should really give this tasty (and cheap!) recipe a go. In this episode of The Tasty Tenner food vlogger and chef Tess Ward shows you how to make a quick and easy thai mussel dish, served with thick garlic sourdough bread.

Prep:15mCook:14mTotal:29m2 kg Mussels4-8 Thick Slices of Sourdough2 Shallots50 g Butter500 ml White WineA Small Handful of Fresh Flat Leaf Parsley

Prepare the mussels by washing and scrubbing them and pulling our their beards. Discard any that are open - if you tap them they should close. Then leave them to soak in cold water for about 10 minutes.

Put a large pan on a medium heat. Add the butter and finely chopped shallots and leave them to sweat for 5-10 minutes until soft. Whilst you caramelise the shallots toast the bread.

Increase the heat and chuck the Mussels in with the shallots. Add the White Wine and put the lid on. Cook for 3-4 minutes, discarding any that remain closed. Meanwhile, rub the toast with garlic and drizzle with oil.

Serve in a large sharing bowl with the finely chopped parsley on top and the toast around the edges. You could even add double cream for richness if you wanted.
