How To Make Asian Style Noodles With Mango

Prep:15mCook:7mTotal:22m300 g soba noodles1 green unripe mango2 medium carrots2 green chilliessmall handful of coriander, chopped2 tbsp toasted sesame seed oil4 tbsp fish sauce2 tsp sugar50 g chopped peanuts1 lime, juiced

Cook the soba noodles according to packet instruction in plenty of boiling salted water. Once cooked drain the noodles and place into a bowl. Pour in 2 tbsp of toasted sesame oil and stir through. Leave the noodles to cool and then place in the fridge to chill.

Peel and finely slice your unripe mango and carrots. Chop up your green chillies, spring onions and coriander. Take your chilled noodles out of the fridge and pour in 3-4 tbsp of fish sauce. Combine 2 tsp of sugar and a squeeze of lime juice and mix into the salad. Mix through the carrots and mango, keeping some aside to garnish. Add two thirds of the spring onions, coriander and the chillies and mix through.

Divide your noodle mixture between your serving plates and sprinkle over some of the reserved ingredients. Top with some roasted chopped peanuts and finish with a splash of sesame seed oil.
