How To Make Rainbow Rolls

Enlarge Looking for the perfect sushi dish to serve to your party guests? This colourful sushi not only tastes great but looks it too. Follow this tutorial with Japanese chef Atsuki Ikedda to learn the easy steps to making rainbow sushi at home.

Prep:20mTotal:20m120 g prepared sushi rice1 sheet of nori4 cucumber strips80 g fresh salmon1/4 avocado40 g sea bass4 slices boiled prawns1/4 tsp wasabi paste1 raddish5 g salmon roe5 g tobiko roewatercress to garnish

Wet your hands and take an apple sized handful of prepared sushi rice. Spread the rice evenly along half a sheet of nori placed on a bamboo sheet. Place the nori on one side of the bamboo sheet, fold the other half of the bamboo sheet over the rice and flip the sushi upside down.

With the nori facing you and the rice facing the mat, spread a small amount of wasabi paste in a line along the centre of the nori. Place a long strip of cucumber along the centre of the nori and place a strip of salmon on top. Next add two slices of avocado. Start rolling the sushi by placing your thumbs over the side of the bamboo mat closest to you, and your fingers on the toppings to keep them in place. Roll the sushi over to cover the toppings and then continue to roll.

To decorate your sushi lay strips of sea bass, prawn, avocado and salmon on top of the rice. Cover with your bamboo mat and press the toppings down to stick them into place. Continue with you second strip of nori. To cut your sushi rolls first place them onto a chopping board, then wet a sharp knife and cut the roll in half. Place the two halves alongside each other and cut them into 4. Put your sushi onto a serving plate and add a very small amount of wasabi onto the top of each small roll. Place a slice of radish on top of the wasabi and garnish with salmon, tobiko roe and a sprinkle of watercress. Serve with soy sauce.
