How To Make Potato Rosti

Remove the skin from your potatoes and grate them into a bowl. Give the grated potatoes a squeeze to remove the starch and drain. Crack two eggs into the bowl with the potato and using your hands, mix all the ingredients together.

Melt the butter in a frying pan over a medium heat until it has turned golden brown. Take half of the potato mixture and roll it in your hands to form a ball. Place in the pan and push down to form a patty then season with salt and pepper. After 2-3 minutes flip the rosti over. Cook the rosti on the other side for 2 minutes and then place onto a plate. Repeat with the second ball of potato to create your second rosti.

Serve with bacon pieces, or with any grilled meat.
