Meryl Streep wheatberry salad

I have approximately this recipe for a salad that I enjoyed at the grocer on Elgin in London. This was my lunch of choice every day we shot the movie Mamma Mia!, in the rainy summer, London had seen for some time. It evokes the Greece and the smile and has a bright and light taste. Enjoy!

pepperoncinis 4-6, or pickled peppers

4-5 spring, parties green only, sliced onions

2 tbsp. extra virgin olive oil

25g chopped Mint

seeds of Pomegranate 110 g

100g feta cheese, cut into cubes

Cook the wheatberries according to package instructions. Set aside to cool completely, then pour into a bowl. Add pepperoncinis or pickled green peppers, onions and olive oil and stir to mix. Stir the seeds of Pomegranate and mint and mix in the cheese. Season to taste. This salad is excellent served at room temperature or chilled.
