How To Make Huevos Rancheros With Chorizo

Enlarge There is no meal quite as indulgent as brunch! In this episode of episode of Bring On The Brunch Rich Harris shows you how to make huevos rancheros with fried chorizo.

Prep:10mCook:25mTotal:35mvegetable oil1 onion, peeled and finely chopped2 garlic cloves, peeled and crushed1 chipotle en abodo, finely chopped or 1-2 tsp chipotle paste2 tins of chopped tomatoespinch of caster sugarsea salt and pepper120 g chorizo, finely chopped4 small corn tortillas4 eggssmall bunch of coriander, chopped1 red chilli, deseeded and finely chopped

Heat a little vegetable oil in a saucepan, add the onion and fry for 5 minutes until soft. Add the garlic and chipotle en adobo and fry for a further 2 minutes until fragrant. Add the tomatoes and sugar, bring to a simmer and cook gently for 10-15 minutes until thickened. Season to taste with salt and pepper and keep warm.

Heat a little oil in a frying pan, add the chorizo and fry gently for 3-4 minutes until crisp.

In a separate pan, heat a little oil and fry the tortillas for 1 minute on each side until golden. Drain on kitchen paper and keep warm in a low oven. Add a little more oil to the pan and fry the eggs.

Spread each tortilla with a spoonful of the sauce, then top each with a fried egg and sprinkle over some of the chorizo. Finish each with a little chopped coriander and chilli.
