Start by toasting your slices of tiger bread. In a large bowl whisk together the eggs and milk, and a pinch of salt, then dunk your slices of toast into the mixture, making sure they are well covered. Heat half the butter in a large frying pan over a medium heat.

While the butter is melting, mix together your goats yoghurt and the softened goats cheese. Add some lemon zest to the mixture and stir.

Once your butter has melted and the pan is hot add your first two slices of French Toast. Leave for a couple of minutes until golden brown and then flip. Continue cooking the toast on the other side for a couple of minutes. If you pan is small you can cook the toast in batches.

While the toast cooks on the second side, cut the pears into quarters and cut out the core, then slice into thin slices.

Serve the French Toast hot with a big dollop of the goats yoghurt mixture, a few slices of pear and a generous drizzle of honey.
